The cooperation with Höflinger Müller began in 2020 with the introduction of the forecasting system for order optimization and automation. Since then, the deep-learning algorithm has been determining the sales forecasts for all stores on a daily basis in order to deliver quantities to the stores that are exactly in line with demand. To achieve the best possible precision, the forecasts are based on historical data, current offers and location-specific data such as weather forecasts, vacation periods and public holidays. This system convinced Marcel Beynio as the responsible project manager at Höflinger Müller Bakery, but it did not go far enough for him. So, with the help of the industry knowledge of the Höflinger Müller team, another technical solution was developed: the Intelligent Day Planner. This feature is now being used in all 120 Höflinger Müller stores and supports the staff in intraday post-production.
For this purpose, the production tasks are automatically displayed in a scheduled to-do list. This provides store employees with an intuitive tool that supports them on site in presenting the goods freshly in the display at the right time and in the optimum quantity. The daily planner thus replaces static baking plans. Centrally linked to the cash register via a mobile device, it is always in view of the staff. Thanks to the permanent system comparison of article stock and demand forecasts, the store team receives a warning, for example, if the display cannot cover the sales of pretzels in the next 30 minutes. This means that the fresh tray can be put into the oven in good time and the task checked off as completed. Thanks to automated task control, the staff can concentrate on service, while at the same time minimizing returns and optimizing store results at the end of the day.

Höflinger Müller GmbH is one of the leading suppliers of artisan baked goods in Bavaria and has over 140 branches in Munich, Upper Bavaria and Lower Bavaria under the Müller, Höflinger and Weinzierl brands. Many of these branches have adjoining cafés with an extensive breakfast and lunch menu. As the son of a long-established Munich bakery family, Franz Höflinger was born with a passion for bread, pretzels and the finest baked goods. In April 2012, the master baker took over the Müller-Brot branch network and rebuilt the company as managing director. His promise: "Finally, the original again" - after all, Müller pretzels are considered the showpiece product of the Bavarian baking trade.
